Basil pesto is one of my earliest childhood food memories, all thanks to my mom, who made this recipe a staple in our home. The sauce is rich in flavour, yet it has only few ingredients, allowing the fresh basil to take on the starring role.

Ingredients:
240g Fresh pasta tagliatelle
2 Tablespoons organic basil pesto "Hybla"
50g Parmesan cheese grated
Salt
Preparation:
1) In a large pot of boiling water with a little bit of salt, cook tagliatelle (fresh pasta) for 3 minutes max. Drain, reserving 1 cup pasta water.
2) In a separate large bowl, grate the parmesan cheese.
3) In the same bowl, add 2 generous tablespoons of pesto. Mix the parmesan and pesto until fully mixed and add couple tablespoons of pasta water until sauce has loosen up a little bit.
4) In the same bowl, add cooked tagliatelle and stir very well until the pesto cver the pasta.
5) Serve immediately.
